Preparation is the Key. Before you even begin to visit venues think about how you want your day to feel. Do you want small and Intimate, Do you want grand and spectacular? Is location important for families travelling. Do you want a big hotel chain or an independent Venue that has more flexibility to tailor packages to your day.
Try listing 3 none negotiable that your venue must have and 5 things you would like to make the day even more special. For Example

This may narrow your search before you head off looking at countless venues that don't fit the bill.
Don't forget the earlier you start looking the more choice you will have as venues often book up over twelve months in advance.
Consider Fridays as many venues offer good discounts for a Friday wedding and these days it is much easier for your guest to take a long week end off work.
Don't be afraid to ask for the unusual. A good venue will be able to accomodate anything form Gold fish in bowls on the tables to a halloween themed wedding, its your special day, so have it your way.
Think about space and time, what will your guest do in between the meals and entertainment, will there be general circulation space whilst the room is relayed for the evening and so on.
Often it is the little details like flowers in the loos or how comfy the chairs are that guests remeber so don't be afraid to look in every room and try things out. After all you are spending good money on making sure the day is one to remember
